Spring Avocado Salad ☀️❤🍃🙌🏻 || Spring is finally here and I couldn't be happier - it's been a long few rainy, dark, cold months in Seattle so I'm excited for the sunny days ahead! 💃🎉 This simple salad is all about the new season. Packed with all the veggies, this bowl always fuels me up for the rest of the day. Make it: baby spinach + arugula + forbidden rice + avocado + steamed green peas + cucumber slices + carrot + purple cabbage + cilantro + a wedge of lemon + sesame seeds. Dressing was made from olive oil + lemon + pink Himalayan salt + cracked black pepper. Have a great week, everyone! 😘
